Asian Lettuce Wraps – An even "butter" recipe!

In the past, we showed you a delicious recipe from for a Pear, Feta, and Butter Lettuce salad. As it turns out has lots of great recipes that you can use butter lettuce in. “Lettuce tell you” about another one of our favorites: Rachel Castro’s Asian Lettuce Wrap recipe. These delicious treats are great for a party or a simple dinner and can be ready in just 35 minutes.

To get started you’ll need the following ingredients (for 4 servings):

  1. 16 Butter Lettuce Leaves (we recommend Live Gourmet Butter Lettuce of course!)
  2. 1 pound lean ground beef
  3. 1 tablespoon cooking oil
  4. 1 large onion (chopped)
  5. 2 cloves fresh garlic (minced)
  6. 1 tablespoon soy sauce
  7. 1/4 cup hoisin sauce 
  8. 2 teaspoons pickled ginger (minced)
  9. 1 tablespoon rice wine vinegar 
  10. 1 8oz can water chestnuts (drained and finely chopped)
  11. 1 bunch green onions (chopped)
  12. 2 teaspoons Asian (dark) sesame oil
  13. (Optional) Asian chili pepper sauce

Fun With Butter Lettuce

Shortly after we showed you our Hand Held Mini Salad recipe, some fans of Live Gourmet Butter Lettuce had a couple of people over for hors d’oeuvres and decided to use our recipe. They sent us some fun pictures and we thought we’d share.

They started out with a head of our Live Butter Lettuce, a plate of hors d’oeuvre toppings, and a bottle of wine.

The Squircle of Life by Live Gourmet

The Live Gourmet Living Butter Lettuce Squircle clamshell is designed to allow the same room for the lettuce leaves while reducing the area that contains the root ball. Pear, Feta, and Butter Lettuce Salad

At Live Gourmet, we are always on the lookout for awesome recipes that we can use our Live Butter Lettuce in. Yesterday, we stumbled upon this gem from “Steph” over at This simple recipe combines just five simple ingredients to create a delectable salad. The sweetness of the pears, the savory of the cheese, and the tang of the vinaigrette create a pleasing contrast that will titillate your taste buds.

All you need is:
1.) 1/2 Head of Live Gourmet Butter Lettuce
2.) 1 Bosch Pear (cored and cut into bite-sized pieces)
3.) 1 Asian Pear (cored and cut into bite-sized pieces)
4.) 1/2 Cup crumbled feta cheese
5.) 1/2 Cup balsamic vinagrette

Open Faced, Low Carb Grilled Cheese

Live Gourmet Butter Lettuce

Yesterday we got an email from one of our customers (and blog readers), Calla in Carpinteria, California (where our headquarters are!).  She was inspired by the gluten free taco recipe and took to her own recipe creation, which she graciously shared with us (thank you!)

Lettuce tell you about Calla. Calla is a mom on a gluten-free diet who’s always trying to find tasty treats that she can eat. So Calla thought she’d send us her bright idea, using Live Gourmet butter lettuce (instead of bread), for a healthier grilled cheese sandwich.

Here’s Calla’s recipe (makes one low carb grilled cheese sandwich!):

1/2 Tbsp butter (or substitute)
2 Leaves Live Gourmet Butter Lettuce
3 Slices Cheese

Melt butter in a pan. Put in leaf of lettuce with cheese slices on top. Cover first leaf and cheese with second lettuce leaf. Cook on very, very low heat (this is the important part), occasionally turning over, until the cheese is melted.
Calla also likes adding salsa and crushed up tortilla chips.

Hand-Held Mini Salad Recipe

Butter lettuce can be tossed (pardon the salad pun) into so many recipes.  We have shared burger recipes, low-carb recipes and even gourmet chef recipes to show butter lettuce’s diverse culinary options.  To keep the happy, healthy eating ideas flowing, lettuce suggest a bit of Mediterranean fare. These delicious hand-held mini-salads are easy to make and fun to eat, if a bit on the messy side. Plus, with few carbs and no gluten, they’re on your diet too.
Hand-held Mini Salad Recipe


1 Head of Live Gourmet Butter Lettuce
1 Large Tomato
1 Avocado
A Handful of Kalamata Olives
1 Bell Pepper
2 Cooked Chicken breasts (or cold cuts of your choice)
6 Ounces of fresh mozzarella cheese
1 Cup of fresh blueberries (Yes blueberries. Trust us; you’ll love ‘em!)

1/3 Cup of Olive Oil
1 Tablespoon of Balsamic Vinegar
½ Teaspoon of Basil
½ Teaspoon of Oregano
Salt and pepper

Step 1: Thinly slice, and lightly salt, all of the salad ingredients except for the blueberries and the lettuce.
Step 2: Artfully arrange the salad ingredients as you see fit.
Step 3: Whisk together all of the vinaigrette ingredients in a bowl, add salt and pepper to taste.
Step 4: Serve and enjoy buffet style. Each person should take a leaf of lettuce, add whichever topping they desire, and then drizzle with vinaigrette.
My personal favorite: Chicken, Cheese, and Blueberries, with lots of vinaigrette.

How To Get Kids to Eat Greens – "Butter" them up!

Lettuce face it, getting kids to embrace the “eat your colors” healthy eating mindset is not always easy.  Thanks to a mom who saw that we were “web reachable” thanks to our Live Gourmet Facebook page, we were able to get this fun (and funny!) photo (see below) from one of our customers (thank you!).

Want to get your kids to eat more greens? – “Butter” them up!

This photo (and healthy eating tip!) came from a happy customer who got Live Gourmet from a Whole Foods Market.  Her tip:

“Make healthy eating FUN!  It was dinner time.  I had pulled off the outer leaves of my Live Gourmet Butter Lettuce and was chopping them for a salad and before I could get to the inner leaves, my kids started hovering around the kitchen.  Instead of shooing them away so I could cook, I quickly put the remaining butter lettuce that was still on the roots into a glass and put some of the salad fixings on the table with toothpicks and “challenged” my kids to make the “coolest salad presentation” they could.  As I went back to dinner prep, my kids created “Butter Betty” (yes, they named her!)  My friends can’t get their kids to eat veggies (let alone salad!!) and my kids are the opposite!  My kids love the taste of Live Gourmet Butter Lettuce.  It’s sweet, easy to prep and to my surprise FUN for my kids in more ways than one!  Healthy eating doesn’t have to feel like healthy eating, especially for kids.  Choose what you have in your kitchen and make eating a family experience.  I advise parents to cook WITH their kids.  The minute cooking is separated from a child’s experience, the enjoyment of food diminishes!”

**By the way, “Butter Betty” was happily eaten by a 7 and 11-year old that evening!  Yay for “buttering up” kids up to eat their veggies!

Low-Carb Gluten Free Taco Recipe

Lettuce get right down to it – we love tacos! We also get a lot of customers who ask us for great low-carb recipes and gluten free options. Here’s a recipe for tacos that’s tasty and fits your diet! Plus, this recipe is fully customizable, so you can make it just the way you like it! Lettuce know what you think!


  • 1 head Live Gourmet Butter Lettuce
  • 1 bag shredded cabbage
  • 2 cups cooked meat (or meat alternative) of your choice (we used chicken)
  • 2 diced tomatoes
  • 1(1/2) cup grated cheese (we used Monterey Jack)
  • 1 Onion
  • 1 Red bell pepper
  • 1 Poblano Chili Pepper
  • Salsa of your choice
  • 2 tbs Oil of your choice (we used Olive)


    1. Cook and shred or dice your 2 cups of meat. Season with salt and pepper. Put into a bowl.
    2. Thinly slice the onions and peppers, then put them all in a pan and sauté with two tablespoons of oil until soft. Season with salt and pepper. Put into a bowl.
    3. Put the remaining ingredients in separate bowls. Serve buffet style, using the Butter Lettuce leaves as taco shells.

(Be careful not to over-stuff or in any other way rip the lettuce leaves or you’re going to have a hard time eating your tacos).

Serves 4.

Nutritious and Delicious: Upland Cress

At Live Gourmet we have a saying when it comes to our Upland Cress, “Good things come in small packages”. Upland cress is a leafy green veggie that is technically one of the most nutritious vegetables out there. Not only is it a good source of calcium but it’s packed with other vitamins and minerals including Iron, Magnesium, Vitamin A and Vitamin C.

Get cooking in the kitchen with a recipe from Savor California for Watercress Soup (you can also use Upland Cress in recipes that call for watercress.) Mmm…delicious!

Watercress Soup

• 4 Tablespoons sweet butter

• 2 cups finely chopped yellow onions

• 1/2 cup minced shallots

• 3 cups chicken broth

• 1 medium potato, peeled and diced

• 4 bunches Live Gourmet Upland Cress (Upland cress can be used in recipes that call for watercress)

• 1 cup heavy cream

• To taste salt and freshly ground pepper

Instructions: Melt butter in a heavy pot. Add the onions and shallots and cook, covered over low heat until tender and lightly colored, about 25 minutes. Add chicken broth and the potato, bring to a boil, reduce heat and simmer, partially covered, until potato is very tender, about 20 minutes. While stock is cooking, remove the leaves and tender stems from the watercress and rinse. When potato is tender, add watercress (or upland cress) to the pot, cover, remove from heat and let stand for 5 minutes. Strain the solids out, reserving the cooking liquid. Purée the solids in a food processor or blender. Add back 1 cup of the cooking liquid. Continue processing until smooth.  Return purée to the pot, stir in the heavy cream and add additional cooking liquid until soup is the desired consistency, 1/2 to 1 cup. Season to taste with salt and pepper and simmer until just heated through.
