Here’s to Eating Better – By Eating Butter (…Lettuce that is!)

This “eating butter” tip is from one of our butter lettuce fans in Summerland, California.

She wrote in saying:

Dear Live Gourmet,

I made a New Years Resolution to eat better (my husband and I are new parents and we are working on trying to juggle parenthood and lose baby weight!)  

Instead of going on some gonzo diet to make our resolution a reality, we simply committed to replacing some of our normal calories with your butter lettuce instead!  We are eating the same food we love while loving the fresh, healthy addition to our dinners.  

We usually get about 3 dishes when we order Chinese takeout.  Since we get 1-2 lettuce heads from our local grocery store every week to have that for our main meals, we took a gamble and ordered less – only ordering orange chicken and some rice.  Not only did we eat better (with butter lettuce), we ate less and had leftovers.  I had to take a picture of our dinner, we put the chicken and rice on the butter lettuce (the chicken was saucy) and shaved carrots on the top and it was so delicious!

We are loving our new “eat butter” plan!

Lettuce Eat Leftovers! Chinese Leftovers Repurposed

The recipe below really inspired us because our customer is like many of our happy customers – a busy working mom who in her spare time (yes, chuckle inserted here!) wants to feed her family in a happy, healthy and time-efficient way.  We loved Lynn T of Florida’s creative recipe to repurpose leftovers in a fun, healthy way. **Lynn, thank you for emailing us, we really appreciate you.

Lettuce Eat Leftovers!  Chinese Leftovers Repurposed

Lynn had a hungry family of four fighting over some Chinese leftovers and not enough to go around to make full plates…problem solved with Live Gourmet Butter Lettuce!!
Lynn took her Chinese leftover Kung Pao Chicken, Chow Mein and Sweet and Sour Shrimp and placed it all over beds of fresh butter lettuce adding cucumbers and tomato (she said one of her kids denied the tomato but she got the kids devouring healthy greens!) making the leftovers stretch into a colorful, yummy, nourishing salad.
Lynn’s secret salad dressing really impressed us.  It sounded so good that we tried it ourselves – it was delicious!

Secret Salad Dressing:
– Four-five tablespoons of Follow Your Heart Vegenaise
– Teriyaki sauce (add a spoonful to start, add as needed for flavor)
– Soy sauce (add a spoonful to start, add as needed for flavor)
Sriracha Rooster Sauce (adds spice, a little goes a long way…yum!)
– Salt and pepper (optional) to taste
Mix in a container with fork, add ingredients above to enhance flavor to desired taste or extend sauce quantity)

Hand-Held Mini Salad Recipe

Butter lettuce can be tossed (pardon the salad pun) into so many recipes.  We have shared burger recipes, low-carb recipes and even gourmet chef recipes to show butter lettuce’s diverse culinary options.  To keep the happy, healthy eating ideas flowing, lettuce suggest a bit of Mediterranean fare. These delicious hand-held mini-salads are easy to make and fun to eat, if a bit on the messy side. Plus, with few carbs and no gluten, they’re on your diet too.
Hand-held Mini Salad Recipe


1 Head of Live Gourmet Butter Lettuce
1 Large Tomato
1 Avocado
A Handful of Kalamata Olives
1 Bell Pepper
2 Cooked Chicken breasts (or cold cuts of your choice)
6 Ounces of fresh mozzarella cheese
1 Cup of fresh blueberries (Yes blueberries. Trust us; you’ll love ‘em!)

1/3 Cup of Olive Oil
1 Tablespoon of Balsamic Vinegar
½ Teaspoon of Basil
½ Teaspoon of Oregano
Salt and pepper

Step 1: Thinly slice, and lightly salt, all of the salad ingredients except for the blueberries and the lettuce.
Step 2: Artfully arrange the salad ingredients as you see fit.
Step 3: Whisk together all of the vinaigrette ingredients in a bowl, add salt and pepper to taste.
Step 4: Serve and enjoy buffet style. Each person should take a leaf of lettuce, add whichever topping they desire, and then drizzle with vinaigrette.
My personal favorite: Chicken, Cheese, and Blueberries, with lots of vinaigrette.
