Larry’s Mango Salmon Salad

Today’s blog post is our favorite kind of recipe: a customer recipe! Last week Live Gourmet customer Larry Richards posted the picture to the left on our Facebook page along with the comment below. His Butter Lettuce salad looked so delicious we knew we had to share it, so we asked Larry to give us the recipe and he very kindly obliged. Thanks Larry!

Pasta Sauce with Upland Cress

One of our customers, Lynn Ross in California, emailed us her “easy peasy lemon squeezy” pasta sauce recipe that she makes with our Upland Cress.

Yes, she really did say “easy peasy lemon squeezy” when she emailed us!  This is a super-fresh sauce, no cans!

Homemade Pasta Sauce with Scallops and Upland Cress

Here’s what you’ll need:

Homemade pasta sauce with tomato, garlic, mushroom and cress
  • 4-6 tomatoes (depends on tomato size and how saucy you want your sauce), chopped
  • 2-3 cloves garlic (your preference), sliced
  • Half an onion (optional, not used in this recipe)
  • Living Upland Cress
  • Mushrooms, sliced
  • Scallops, frozen and thawed or fresh
  • Squeeze of lemon
  • Butter
  • Olive oil
  • Parmesan cheese
  • Pasta noodles for 4

Here’s what to do:
Cook pasta, drain

Heat butter in pan, add mushrooms and garlic
Add olive oil and tomatoes, simmer
Cook scallops
Add scallops and upland cress when almost ready to serve, stir
Add the lemon squeeze.  Crushed red pepper and other spices like basil can be added
Stir in pasta
Add cheese

Simply Delicious Turkey Sandwich

Last week we got a message from one of our customers named Daniel. Daniel wanted to share the recipe for his favorite sandwich with us, and after trying it out, we knew we had to pass it on. This sandwich is simple and easy to make, but has a high brow appeal and, more importantly, it’s really tasty.

Here’s the recipe:


  • 4 bread sized pieces Living Butter Lettuce
  • 1 or 2 slices tomato
  • 2 to 4 slices of turkey lunch meat (Daniel says he uses Butterball brand because it’s healthy)
  • 2 or 3 slices of Trader Joe’s English Cheddar with Caramelized Onions
  • Trader Joe’s 21 Seasoning Salute
  • Olive Oil
  • Balsamic Vinegar
  • Bread (Nothing sweet. Whole wheat is good.)


  1. Stack ingredients on a slice of bread (Have lettuce be the very bottom and very top layers to keep the bread from getting soggy)
  2. Sprinkle with 21 Seasoning Salute
  3. Splash with Oil and Vinegar
  4. Close it up with your other slice of bread
  5. Enjoy! (Daniel suggests pairing with a cold glass of pineapple juice.)

Tomato, Olive Oil, Garlic and Upland Cress Pasta Sauce

We received this great pasta sauce recipe from one of our Upland Cress customers, Stacy Gulino.  We wanted to share it because it is simple, delicious and nutritious!

Our customer made the pasta sauce and served it over ravioli – you can serve this over any pasta of your choice!  Enjoy!

Ravioli with Tomato, Olive, Garlic and Upland Cress Pasta Sauce
#1. Mix upland cress with organic garlic, onion and olive oil

#2. Sauté upland cress with organic garlic, onion and olive oil

#3. Mix the sauté with Trader Joe’sOrganic Fire Roasted/ Diced Tomatoes and simmer the blend

#4. Boil the cheese ravioli(or pasta of your choice) and pour the upland cress / tomato sauté over it 🙂

#5. May your taste buds and bellies be satisfied.

Beet and Upland Cress Salad Recipe

We’ve spent a lot of time on this blog giving you recipes involving our Live Butter Lettuce, perhaps to the neglect of some of our other veggies. So, lets talk Upland Cress. Did you know that our Living Upland Cress has more vitamin C than oranges, and more vitamin A than broccoli? Plus for those of you looking for a little spice, this is just the thing. (Don’t worry though, you can cook the spice out if that’s not your cup of tea.)

To show our Upland Cress a little love, we sent a package of it to Ayah over at HealthyTastyCheap.com. Healthy Tasty Cheap is a great website run by two cousins, Gillian Young and Ayah Young, who explore healthy ingredients and tasty recipes that are good for your body and for your wallet. The blog has received recognition as a FoodBuzz “Featured Publisher” and as a WellSphere “Top Heath Blogger”. We were excited to see what Ayah would come up with when we sent her the Upland Cress and she did not disappoint! Below is the delicious Beet and Upland Cress Salad that she created.

  • 2 small/medium steamed beets (sliced)
  • 1/8 cup dried cranberries
  • 1/8 cup chopped pecans
  • 1/4 cup crumbled goat cheese

Lettuce Eat Leftovers! Chinese Leftovers Repurposed

We love hearing from our customers – how they eat our greens, their experiences, tips and most of all, we LOVE hearing creative Live Gourmet Customer Recipe ideas to see how you eat our greens at home.

The recipe below really inspired us because our customer is like many of our happy customers – a busy working mom who in her spare time (yes, chuckle inserted here!) wants to feed her family in a happy, healthy and time-efficient way.  We loved Lynn T of Florida’s creative recipe to repurpose leftovers in a fun, healthy way. **Lynn, thank you for emailing us, we really appreciate you.

Lettuce Eat Leftovers!  Chinese Leftovers Repurposed

Lynn had a hungry family of four fighting over some Chinese leftovers and not enough to go around to make full plates…problem solved with Live Gourmet Butter Lettuce!!
Lynn took her Chinese leftover Kung Pao Chicken, Chow Mein and Sweet and Sour Shrimp and placed it all over beds of fresh butter lettuce adding cucumbers and tomato (she said one of her kids denied the tomato but she got the kids devouring healthy greens!) making the leftovers stretch into a colorful, yummy, nourishing salad.
Lynn’s secret salad dressing really impressed us.  It sounded so good that we tried it ourselves – it was delicious!

Secret Salad Dressing:
– Four-five tablespoons of Follow Your Heart Vegenaise
– Teriyaki sauce (add a spoonful to start, add as needed for flavor)
– Soy sauce (add a spoonful to start, add as needed for flavor)
Sriracha Rooster Sauce (adds spice, a little goes a long way…yum!)
– Salt and pepper (optional) to taste
Mix in a container with fork, add ingredients above to enhance flavor to desired taste or extend sauce quantity)

Open Faced, Low Carb Grilled Cheese

Live Gourmet Butter Lettuce

Yesterday we got an email from one of our customers (and blog readers), Calla in Carpinteria, California (where our headquarters are!).  She was inspired by the gluten free taco recipe and took to her own recipe creation, which she graciously shared with us (thank you!)

Lettuce tell you about Calla. Calla is a mom on a gluten-free diet who’s always trying to find tasty treats that she can eat. So Calla thought she’d send us her bright idea, using Live Gourmet butter lettuce (instead of bread), for a healthier grilled cheese sandwich.

Here’s Calla’s recipe (makes one low carb grilled cheese sandwich!):

1/2 Tbsp butter (or substitute)
2 Leaves Live Gourmet Butter Lettuce
3 Slices Cheese

Melt butter in a pan. Put in leaf of lettuce with cheese slices on top. Cover first leaf and cheese with second lettuce leaf. Cook on very, very low heat (this is the important part), occasionally turning over, until the cheese is melted.
Calla also likes adding salsa and crushed up tortilla chips.
