Open Faced, Low Carb Grilled Cheese

Yesterday we got an email from one of our customers (and blog readers), Calla in Carpinteria, California (where our headquarters are!). She was inspired by the gluten free taco recipe and took to her own recipe creation, which she graciously shared with us (thank you!)
Lettuce tell you about Calla. Calla is a mom on a gluten-free diet who’s always trying to find tasty treats that she can eat. So Calla thought she’d send us her bright idea, using Live Gourmet butter lettuce (instead of bread), for a healthier grilled cheese sandwich.

Here’s Calla’s recipe (makes one low carb grilled cheese sandwich!):
1/2 Tbsp butter (or substitute)
2 Leaves Live Gourmet Butter Lettuce
3 Slices Cheese
Melt butter in a pan. Put in leaf of lettuce with cheese slices on top. Cover first leaf and cheese with second lettuce leaf. Cook on very, very low heat (this is the important part), occasionally turning over, until the cheese is melted.
Calla also likes adding salsa and crushed up tortilla chips.

Wow, you used my recipe! I'm a huge grilled cheese fan and since I went gluten free, no grilled cheese.
So there was my new Live Gourmet Butter Lettuce and my mad craving for grilled cheese. No one was around to tell me what a dumb idea this was.
It actually really tasted buttery and was way tasty. I was surprised, quite happily by the plain cheese one and was emboldened to make another with more treats on it.
I'm so doing that again!
