Kauai Shrimp with Green Papaya Salad and Thai Sweet-and-Sour Sauce

Today’s recipe is a neat little appetizer that comes to us from Jean-Marie Josselin via Coastal Living Magazine. The recipe serves eight as an appetizer and is sure to delight friends and guests. Plus, if you’re looking for a light dinner for just one or two, adding a side of rice could make it into a full fledged meal. Shrimp lovers are sure to enjoy this one. The green papaya salad along with the sweet and sour sauce creates a delicious complexity atop the simply yummy shrimp and butter lettuce underneath.
You will need a few things before you can bring this dish to life though, here’s the full list:
Thai Sweet-and-Sour Sauce
- 1/2 cup Thai chili garlic sauce
- 1/4 cup water
- 2 tablespoons rice vinegar
- 1 tablespoon minced fresh ginger (Lots of people like The Ginger People)
- 1 tablespoon sugar
Green Papaya Salad
- 2 cups shredded under-ripe papaya (Dark green, firm to the touch.)
- 1/4 cup chopped fresh cilantro
- 1/4 cup fresh lime juice
- 2 teaspoons minced garlic
- 1/2 teaspoon minced jalapeño pepper
- 1/4 teaspoon salt
Kauai Shrimp
- 8 Living Butter Lettuce leaves
- 8 unpeeled large fresh shrimp
- 2 tablespoons olive oil
- 2 teaspoons minced garlic
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground pepper
- 1/3 cup fresh lime juice
