Hidden Butter Lettuce Brownies Recipe Remix from the Paleo Mom

It can be really hard to get kids to eat their greens. Sometimes, with extra picky eaters, the only way to do it is through deception and subterfuge. Today’s recipe focuses on doing just that with something your kids are sure to love: brownies! (Don’t worry, you can’t taste the lettuce). Not only are these brownies packing some seriously nutritious lettuce, they include very little sugar, no gluten, and no dairy. They do, however, include egg (sorry vegans). These brownies are especially good for kids with growing pains because dark leafy greens, like Butter Lettuce, are great sources of magnesium. Sarah Ballantyne, Ph.D. (a.k.a. The Paleo Mom) uses frozen chopped spinach in her recipe however we replaced that with Live Gourmet living butter lettuce in our recipe! So, lets get cooking!

Here’s what you need:

  • 1 ¼ cups chopped Butter Lettuce
  • 6 oz semisweet chocolate
  • 1 cup extra virgin coconut oil
  • 5 eggs
  • 1/3 cup honey (Many people like Manuka Honey)
  • ¼ cup cocoa powder
  • ¼ cup coconut flour
  • ¼ cup ground flax seed
  • 1 cup blanched almond flour
  • 1 Tbsp vanilla
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ tsp cream of tartar
