A Lunch Recipe that Stays Fresh! Chickpea Salad

Chickpea Salad in Butter Lettuce Wraps
(makes 6-8 wraps; salad keeps fresh 2-3 days)

 

•1 cup of canned chickpeas, rinsed and drained
•1 ripe avocado, roughly chopped
•1 large tomato, chopped
•3/4 tsp. ground cumin
•1 tsp. Tabasco sauce
•1/4 cup chopped cilantro
•1 tbsp. chopped chives
•1/2 tsp. salt
 •2 tbsp. extra-virgin olive oil
•1/2 lemon, juiced
•6-8 lettuce leaves (Butter Lettuce or Red Butter Lettuce)
In a large mixing bowl, combine all ingredients and incorporate well.  Pack butter lettuce separately; when ready to eat, spoon mixture onto the leaves.
